Fresh Salad with Cheese Curds

One of my favorite salads is pretty simple: some good lettuce, pepperoncini hot peppers and Olive Garden Italian Dressing topped with flavorful cheese. Recently, I made this with Conebella Farm’s plain and pizza cheese curds and the result was delicious! It was a great healthy salad with the added protein from the cheese curds. I paired it with bread and Conebella Farm’s cultured butter.

Cheese curds are so rich and creamy and full of flavor that they hardly last long enough to be made into anything at my house! However, they are delicious on salads, with crackers, melted on pizza or in sandwiches.

Reasons to Eat Cheese Curds

Like many dairy products, cheese curds are a good source of protein and calcium. Protein-rich foods are always a win because my boys seem to be constantly hungry, and when I’m on the go with them I’m pretty much always hungry too!

Other Names for Cheese Curds

Cheese curds are common in Quebec and the Midwest of the United States and are sometimes called “squeeky cheese” because they have a springy texture that can sometimes squeak against the teeth when bitten into.

About Cultured Butter

Our cultured butter isn’t just your ordinary butter. First of all, it’s made from our Ayrshire cow’s milk, which means it already has a richer flavor and creamier texture than most butter on the market. Then, we add cultures just like we do to our cheese and yogurt products and let the fermentation process happen. This helps add notes of buttermilk to the flavor. Some people find that fermented products are easier to digest, which can be good news for those who have trouble digesting dairy products.

Fresh Salad with Cheese Curds

Ingredients

Scale
  • 4 cups lettuce such as locally grown butterhead lettuce or romaine
  • 1/4 cup pepperoncini peppers
  • 1/4 cup thinly sliced red onions
  • 1/4 cup diced red peppers
  • 1/2 cup Olive Garden Italian Salad Dressing
  • 1/4 cup chopped plain cheese curds
  • 1/4 cup chopped pizza cheese curds

Instructions

Wash the lettuce and place it in a large serving bowl. Add the peppers, dressing and cheese. Toss to combine. Serve with a side of bread and cultured butter. Enjoy!
