Berry Cheddar Cobbler for Two

Ingredients

Scale
  • 3 cups blueberries and blackberries
  • 2 tablespoons sugar
  • 1 tablespoon flour

Biscuits:

  • 2/3 cup unbleached all purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons butter (cold)
  • 1/2 cup grated Conebella Farm sharp cheddar
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F.
  2. Mix flour, brown sugar, baking powder and salt. Cut in butter with pastry blender. Stir in Conebella Farm sharp cheddar, milk and vanilla.
  3. Mix berries with flour and sugar. Add to bottom of a glass baking dish. Spoon the biscuit dough on top.
  4. Cook for 40 minutes or until biscuits are golden brown.
  5. Serve with milk, whipped cream, or ice cream.
